       The name of udon noodle is from Japanese (うどん), it is called UDON in English and Wulong noodle in Taiwan. Though Udon’s name is from Japanese, its production methods could be traced from China, and after years of evolution, Udon noodle has a specific meaning in Japan. According to JAS of Japan , wheat flour should be the main raw material of Udon noodle and no soda & pigments is added in. The diameter of Udon noodle should be over 1.7mm.
       Udon noodle which is snow white or pale yellow is in good tast and can stay for a long time in soup. Especially the feeling of smoothness is quiet enjoyable.
