       Our company’s Ramen is made in Japanese technology and production line , and it can be kept for a long time in bags . Its Japanese name came from China and in Japanese it is read “テーメン” and written as “拉面”, also called “中华面” . It is written as “Ramen” in English . In China, the traditional Ramen noodles are made by hand , however it has developed greatly after spreading to Japan. Now it is produced by machine in quantity, but the formula and the process continues in the old traditional way. In the JAS of Japan, what we called as “Ramen” means that an alkaline substance such as soda, potassium carbonate or sodium carbonate be added in the noodles.
       The Ramen is long and thin (diameter less than 1.7mm across). Usually high gluten flour is used to produce Ramen and sometimes eggs or wheat protein are added in , therefore, the taste of Ramen is good and elastic. Because of the alkaline, the noodles look as pale yellow and have a smell of flour scent.
